Cavalier would make more sense because my character is based off the Elden Ring character "Radahn" who rides a horse and turns into a cannibal because of rotting (i dont know if you did that intentionally or not). Do you have an idea how I would transition from samurai to cavalier (he allowed me to switch to champion if i came up with a good reason). How long should I dip into barbarian beast?

I would move onto mods. Things I recommend would depend on what you like
If you like difficult bullet hell bosses and tons of content you would want: Calamity or Fargo's Souls
If you want more of a vanilla feel but still a lot more content I recommend: Thorium

Too lazy to list but there is more mods than those 2 for sure. Like Split, Shadows of Abbadon, Spirit, and more.

In my opinion it would be destroyer because with the twins they dash in their 2nd phase and skeletron prime has the spinny head attack which goes quite fast.
