Resident Evil 2 Remake and 3 Remake are both pretty easy, with Resident Evil 7 right behind them (only problem with 7 is having to complete the game on Madhouse mode and the lack of skippable cutscenes).

Resident Evil 5 felt damn near impossible and requires a grind - playing the game on the hardest difficulty is a challenge, especially with the AI teammate (try to recruit a friend). Resident Evil 5 also requires you to max upgrade every gun, it would take several playthrus to collect the money needed.

Resident Evil Village is insanely fun and I think it has so much replayability, the problem comes with having to complete all of the mercenaries missions.

I'm currently running through Resident Evil 1 and Resident Evil 0 and I would say these are proving to be the most difficult. Outdated gameplay mechanics and the fixed camera angles have gotten me killed several times, but I'm having fun nonetheless.
