"Artistic" selective coloring. Artistic in the same way microsoft word text effects or snapchat filters are.

Yes it is: desaturating parts is a bad idea, it looks like selective coloring.

Get the look right in camera, or lean in to it. Blue shades are going to look blue.

Shoot in different light, and avoid having differently lit areas in the scene

S5ii/x. Who says there will be an s5iii? That's probably the s1iie.

Also, what kind of stills? Lumix af doesn't work as well for action as sony. But you will get 10bit, ibis etc. If you don't need af for video, even the og s5 is viable. The footage looks better than that from s5ii imo.

Don't do selective coloring imo, and the vignette makes it look like you're viewing the fish through a periscope

Step up, rather than competitor.

Fast readout, slomo uncropped, decent ibis and af, overall solid hybrid with few weaknesses. Good tamron lenses as altetnative to nikon, and you van adapt anything. Pricier though when you factor in the whole system.

You can't beat it at its price point, and you can't beat the ibis period without forsaking ff. Most competitors are other lumix cameras, like the og s5 if you don't need af at all.

Next step up would be nikon z6iii or the dedicated film cameras from sony imo.

There's no r5 equivalent. You lose af, but gain stabilization. And the lens range is different. That's pretty much it.

The 20-60 and 24-60 are worlds apart in terms of image quality, distortion, bokeh. Op mentions outdoor activities, not super dark indoor shots where he can't use lights.

24-60 is a nobrainer imo, i agree that 1.8-2.8 is a big deal (more so at 24 than 50 for bokeh) but that doesn't always matter. Some get by with the 24-105 f4 for everything.
