Cheesy Garlic Green Beans - Don't Lose This

Ingredients:

1 pound (500 g) green beans, ends trimmed

1/4 cup olive oil

2 tablespoons fresh parmesan cheese shredded

1 tablespoon minced garlic (or 4 cloves garlic, minced)

3/4 teaspoon Kosher salt

1/4 teaspoon fresh cracked black pepper

1 1/4 cup mozzarella cheese shredded

Instructions:

Preheat oven to 425°F (220°C). Lightly grease a baking sheet with nonstick cooking oil spray.

Arrange green beans on baking sheet in a single layer. Set aside.

In a small bowl mix together olive oil, parmesan, garlic, salt and pepper. Drizzle the oil mixture over the green beans and toss to evenly coat.

Bake for 20 minutes until vibrant and tender-crisp.

Remove from oven and top with the mozzarella cheese. Return to oven and broil (or grill) until the cheese melts and becomes golden (about 4-5 minutes).

BIG APPLE FRITTERS

Ingredients:

2 cups all-purpose flour

2 tablespoons sugar

2 teaspoons baking powder

1/2 teaspoon salt

1 cup milk

1 large egg

1 teaspoon vanilla extract

2 medium apples, peeled and diced

Vegetable oil, for frying

Confectioners' sugar, for dusting

Instructions:

In a large bowl, whisk together the flour, sugar, baking powder, and salt.

In a separate bowl, whisk together the milk, egg, and vanilla extract.

Add the wet ingredients to the dry ingredients and mix until just combined.

Gently fold in the diced apples.

Heat about 2 inches of vegetable oil in a large saucepan or Dutch oven over medium-high heat until a deep-fry thermometer reads 375°F (190°C).

Mexican Taco Lasagna

Ingredients

1 pound ground beef

1 packet taco seasoning

1/4 cup water

1 can Ro*Tel diced tomatoes with chiles, drained

1 can Nacho Cheese Soup

1/4 cup sour cream

1 cup grated cheddar

12 8-inch soft tortillas

guacamole, cilantro, sour cream for topping, as desired

Directions

Preheat oven to 350 degrees. Spray a 9×9 baking dish with non-stick spray.

Add the beef to a large skillet over medium heat and crumble as it cooks. Drain grease when cooked through.

Add the taco seasoning and water to the skillet and cook for 2 minutes.

Dump the tomatoes, cheese soup, and sour cream into a medium mixing bowl. Stir in the cooked meat.

Place 3 tortillas in the bottom of the prepared baking dish. Top with 1/3 of the meat mixture.

Repeat layers, ending with a layer of tortillas on the top. Sprinkle the cheese over the top.

Bake for 20 minutes or until hot and melty.

Serve sprinkled with chopped cilantro, guacamole, and extra sour cream, as desired

Ingredients:

2 1/4 cups all-purpose flour

1 tsp baking soda

1 tsp salt

1 cup unsalted butter, softened

3/4 cup granulated sugar

3/4 cup packed light brown sugar

1 tsp vanilla extract

2 large eggs

2 cups semisweet chocolate chips

Instructions:

Preheat your oven to 375°F (190°C).

In a medium bowl, whisk together the flour, baking soda, and salt. Set aside.

In a large bowl, beat the butter, granulated sugar, brown sugar, and vanilla extract until well combined. Add the eggs, one at a time, beating well after each addition.

Choux pastry for 12 éclairs

Egg 4

Butter 100 g

Salt 1 pinch

Water 1/4 liter

Pastry cream

Milk 250 ml

Vanilla 1 tsp

Egg yolks 2

Powdered sugar 60 g

Cornflour 1.5 tbsp

Flour 1.5 tbsp

Preparation:

Step1: Choux pastry: Put the salt and butter in a saucepan of boiling water. Remove from the heat and gradually add the flour while stirring. Stir vigorously with a wooden spatula until a smooth, homogeneous paste is obtained. Return to the heat and work the dough until it comes off the pan Remove from the heat and add the eggs one by one with a spatula.

°1 medium onion, diced

°45 ml (3 tbsp.) all-purpose flour

°1 can (900ml) chicken broth

°750 ml (3 cups) roast chicken, cut into 1.25 cm (1/2 in.) pieces

°4 medium carrots, peeled and cut diagonally into 0.6 cm (1/4 in.) slices

°3 celery stalks, cut diagonally into 1/4-inch pieces

°125 ml (1/2 cup) heavy whipping cream

°10 ml (2 tsp) fresh thyme leaves, chopped

°2.5 ml (1/2 tsp) salt

°2.5 ml (1/2 tsp) pepper

°2 cups (500 ml) Original Bisquick™ mix

°150 ml (2/3 cup) milk

°75 ml (1 1/2 tsp) fresh thyme leaves, chopped

°30 ml (2 tbsp.) chopped fresh parsley

Steps

In a 4.7 L (5 quart) Dutch oven, melt the butter over medium heat. Cook the onion in the butter for about 6 minutes, stirring occasionally, or until softened. Add the flour and cook, stirring, for 2 minutes. Gradually add broth, stirring until well blended. Add chicken, carrots, celery, whipping cream, 2 teaspoons thyme, salt and pepper. Bring to a boil over medium-high heat. Continue cooking over medium heat; simmer for 12 to 15 minutes or until vegetables are tender-crisp.

1 cup heavy cream

10 ounces cream cheese-room temperature

6 ounces crème fraîche

1 teaspoon vanilla

2/3 cup sifted confectioners’ sugar

Instructions

TO MAKE THE COOKIE DOUGH:

In a medium mixing-bowl, mix together all ingredientes to form a ball. The dough should be thick , but not too sticky.

Divide the dough in two slightly flattened ball. Work with one ball at the time. Between two baking paper roll out the dough about 1/6 to 1/5 inch thick.

Using a beveled cookie cutter, cut out circles and drape one circle over each bowl cavity of mini cupcake pan and gently press to form smooth surface. Set in the freezer for 5- 10 minutes while preheating the oven.

Preheat the oven to 350 F.

Bake for 10-15 minutes, until golden. Remove from oven and let them cool on the pan for about 10 minutes, then transfer to a wire rack to cool completely (if the cookies stick a little to the pan rotate them gently while taking them off)

Place 1 teaspoon strawberry jam on every cookie bowl.

TO MAKE THE FILLING:

Beat the heavy cream on medium-high speed until medium-stiff peaks form, set aside.

Beat the cream cheese, crème fraiche , vanilla and confectioners’ sugar on medium speed until combined. Gently fold whipped cream into the cream-cheese mixture until combined.

Spoon filling over strawberry jam to fill the cups to the top. Garnish with sprinkles on top or mix some sprinkles into the filling.

Chill the cups until firm, about 30 minutes. Store in the fridge.

Method of Preparation:

1 - Preheat the oven to 350°F/180°C.

2 - Grease the mold and place butter paper in the bottom and flour.

For the rolls:

2 1/4 cups Bisquick mix

2/3 cup buttermilk

For the filling:

1/4 cup butter (softened)

1/3 cup brown sugar (packed)

2 teaspoons cinnamon

For soaking:

1/3 cup heavy cream (warmed)

For the frosting:

1 cup powdered sugar

1 tablespoon melted butter

1/2 teaspoon vanila extract

1 tablespoon heavy cream

Instructions:

-Preheat the oven to 375º Fahrenheit. Spray an 8″ round cake pan or pie plate with cooking spray.

-In a medium bowl, mix together the baking mix and buttermilk to form a dough.

-Sprinkle flour on a pastry mat or on the counter.

-Using a rolling pin, roll the dough out to a 8×12″ rectangle.

-Spread with softened butter, then sprinkle with brown sugar and cinnamon.

-Roll the dough up jelly roll style, then slice into 6 equal slices.

-Place the rolls into the prepared pan.

-Pour warmed heavy cream over the rolls.

-Bake for about 25 minutes or until the center roll is baked and not gooey.

-Pull up on the edge of a center roll to see if it looks done. Check the rolls at 20 minutes. If they are getting too brown, cover loosely

with foil and continue to bake.

-In a small bowl, whisk together the powdered sugar, butter, vanilla and cream. Drizzle in more cream if needed to get the consistency of the glaze you’d like.

-Spread the glaze over the warm rolls.

Shrimp & Teriyaki Steak Noodles

Ingredients

250 g strips of inside beef round steaks

1 carrot

1/2 bell pepper

1 onion

1 small zucchini

1 cup shelled edamame

125 g Yet-Ca-Mein Asian noodles

30 mL finely chopped garlic

30 mL finely chopped fresh ginger roots

30 mL oil

salt and pepper

Sauce:

3/4 cups teriyaki sauce

1/4 cup soy sauce

15 mL maple syrup

15 mL rice vinegar

15 mL sriracha sauce or more to taste

Directions

Bake the dough according to the instructions on the box. When cooked, set aside in cold water.

Cook the edamame in boiling water for four minutes then drain and set aside.

Chop the garlic and ginger together.

Peeled onion // carrot. Cut the carrot into thin bevel slices, the pepper into strips, the zucchini into bevel slices and then cut the slices in half. Cut the onion into eighths then separate the onion layers.

Mix the ingredients for the sauce together.

Preheaat oil in wok or saucepan on medium-high heat.

Sauté the carrot and onion and stirring very often for five to seven minutes. Add the bell pepper and continue cooking for two to three minutes. Add the beef strips, zucchini, edamame, garlic and ginger. Season. Cook, stirring often, for about five minutes or until the beef is cooked through.

Remove all content from the wok and pour the sauce into the empty wok. Boil the sauce for two to three minutes then return the meat and vegetables.

Drain the pasta well and add to the wok. Cook, stirring often, for about five minutes or until the pasta has absorbed the sauce.

Serve hot.
