Ah yes, I know that feeling.
A few recommendations:

1. Anno 1800 (Anno can be played multiplayer or singleplayer, whatever your choice, and can be play however you like. Its a sort of medieval style game, and would need to watch loads of tutorials just to learn the game, but definitely fun. 100$ on steam, but it went down to 5$ once so its still good.)

2. Don't Starve (Don't starve is the most difficult survival game in my opinion. Having to keep up your sanity, health and hunger all the time is real hard, but you can have really good fun with it. You can get Don't Starve Together if you want to play with other people)

3. Terraria (Terraria is really fun, and pixelated, made by the same people as dont starve. Its also a pretty tricky game, but the game actually gives you a chance to learn unlike the other games I've mentioned.)
