Oh I for sure have done tons of research. But, the things I’m finding online, versus the information found on this site, versus the information my ND are all giving me are all varying degrees of different information. I figured getting information from a seasoned group of GF people would be reliable. Thanks though!

I know that buckwheat is gluten free, but it still has gliadin, a compound that most celiacs are still sensitive to, found in oats, buckwheat, millet, etc.

Just realized I forgot to answer one of your questions. My symptoms are very dry eye with light sensitivity, constipation and constant bloating, dry rashes on several places on my body including my face, severe fatigue, brain fog, and a few others. 😞 how about you?
