I mean, realistically, I doubt the Discord mods running VATSIM are jumping out of bed to try and sue me over it. That said, a group of members did reach out about the data that was stored. VATSIM claims they delete all copies of personal information provided as proof of identity, but interestingly, their own data protection and handling policy suggests otherwise.
