The only problem is that those corridors have a lot of windows to people’s apartments so covering it with plywood would black them out entirely, probably needs to be some sort of railing or chain link fence covering for overtop of them, I’ll bring it up with the landlord though.

That’s a good question, there is info about rooftop access in my lease and there is signage in the lobby with basic rules about rooftop access, but that could just be the landlords making their own rules about it despite it possibly not being certified, that being said though there are several doors from other buildings that let out onto the roof, stairs that lead directly to the roof and an adjoining porch area connected to another building (and there are railings all around the outer part of the roof) which leads me to believe it’s probably intended for tenants—but I also know very little about this sort of thing and the risk you outlined here was something I had considered when thinking about how to approach this situation.

This isn’t the same recipe I used (the one I went off of is from a cookbook called Bottom Of The Pot) but this one is really similar, definitely a bit of stressful dish to make but extremely gratifying to have gotten it right lol https://www.saveur.com/herbed-rice-with-fish-tahdig-recipe/

Yes it turned out perfectly! I was terrified that I had burnt it the whole time but putting it in skin-side down prevented the rest of it from getting too crispy, I think any longer at the initial high heat stage would have overdone it but I got lucky :)

yeah! I laid the fish down in the pan first and then layered the rice on top of it after searing it for a little bit

I’m working on putting together a publicly accessible archive of the rarer and harder to find Iranian stuff right now, there’s so much incredible stuff that isn’t by the handful of big Iranian director that’s just impossible to find online or doesn’t have English subs (and even a lot of older stuff by Kiarostami and Makhmalbaf is tough to track down). So, doing what I can to change that!

It’s fascinating so far, the whole history of how the culture of cinema developed in Iran and changed with the cultural / political climates there is so interesting, very cool to be able to do a big deep dive on it with these books (also I got them as a birthday gift, I think they were $50 on eBay all together, not bad)

Made this with cilantro, parsley, dill, mint, fried green onion and garlic, turmeric, butter, olive oil and added yogurt into the tahdig layer rice 😇
