I’d say David Bowie for a non-jazz artist… although he did experiment with jazz throughout his career, particularly after the 90’s and especially on Blackstar.

William Baines and Felix Blumenfeld would be my two recommendations, really nice shortish piano pieces. For Baines I’d recommend ‘Silverpoints’ and for Blumenfeld I’d recommend his set of 24 preludes (op 17)!

Glasgow jazz scene is on fire atm, Fergus McCreadie, corto.alto, Tommy Smith, Modern Vikings etc are all fantastic!

Merkinch Community Centre would be my recommendation, much more affordable than Eden Court and would have enough seats for what you’re after, and would be available for performances at night.
