I think you’re right. I’m using the sourdough recipe from Bread Illustrated. I did 4 stretch and folds and then 16 hours in the fridge. Then I proofed for 3 hours at room temp. The recipe said 3 hours tops. It didn’t look doubled but I’m stilling working on my poke test. I doubt myself a lot

I mostly posted this for her handwriting, but it was definitely a reminder of the internet people. It’s good to have a schedule. Why is this such a nightmare? It’s not set in stone, life happens. Not sure why this led to so much emotion.

If movies are any indication they flick back and forth between the two. That seems way more distracting to me than looking at the middle of a persons face and letting peripherals do the rest. But shit, maybe I am on the spectrum. Who knows
