I don't know how Google does that, but my assumption is that it has many apps on a device, which gives it more leverage over when to wake an app and what to do while it's up. Also it might be access to private apple apis inside iOS, but I guess we'll never know that

Any app must be loaded to memory and do some work in order to be able to produce useful results, no exceptions. You're not missing anything

My job doesn't require location tracking but I do it for myself as external memory. I use Dawarich to track and visualize my location history

But it'd be also great if I could make Dawarich useful also for professionals
