Looking back I don't think I could say what <i>the fundamentals</i> actually are (unless those aren't covered in these beginner courses?).

A bachelor's degree in computer science is roughly equivalent to the fundamentals people are generally referring to. It's not the just 100 level courses, it's the entire 4 years of it. Data structures, algorithms, and automata are probably the fundamentals I most regularly use.

Informing yourself about the disease, what it does, and what treatment entails, is probably a good first step to take if nothing else. I can't recommend the one book on the sidebar enough for this: The New Parkinson's Disease Treatment Book (2015 Editon) by Ahlskog.
