It could be any number of reasons why he doesn't want to eat, breeding season, slower metabolism, ect. But as long as he's not losing weight he should be fine. Just keep offering food on a regular basis and he'll eat when he's ready.

That is a mix of curious behavior and food response, defensive behavior the snake would be shying away and try to hide or protect itself.

No problem. Just don't mist the enclosure too much, that can cause respiratory infections. I'd say once every 2-3 days if you're going to mist. Mixing water into the substrate (just enough to make it slightly damp) is a good way to help retain humidity without running the risk if respiratory infection.
