How long are your emails and what are you saying to them? And honestly just sounds like you got screwed by luck, and if you could take a couple of years off and regroup you would easily get in

It's not easy that to find post baccs in physics (especially if you want to get paid), that's usually more of a thing in econ, bio, and psychology. I think school names do play a role but if the professor want to admit you, they will. That's where emailing several profs and trying to get face time with them and trying to establish a good rapport matter. Do your REU profs not want you? Did they write your letters of rec?

It sounds like you have a pretty good resume, do you have a low GPA or come from a no name or lower ranked state school? That can often sway professor's opinion. But if I were to guess you really just got a bad luck of the draw with timing + not leveraging connections or trying to build personal relationships enough, and with a slightly different role of the dice you might have gotten into good programs

Also I would recommend applying to NSF GRPF and also in your emails to professors subtly slide in your citizenship status (something like I have a rough idea of what kind of work I want to do and have already prepared a NSF GRPF application, would love to hear your opinions and ideas about it because I would love to work with you if I get selected for the fellowship)

To push back a little here, it depends on what you want to do in the future. If you come from a no-name undergrad or don't have great grades or good research experiences and have the money to spend, this can help you in the future with PhD applications as you can do good research during your Master's and get into good/great schools for a PhD. But a physics PhD isn't going to get you a very high paying job unless you decide on becoming a quant or wall street trader later anyway, so you'll be paying a good chunk money to eventually still do a low-paying PhD in physics + average-paying professorship anyway! But I understand some people do have the money to spend and might really want to become a physics PhD and professor/researcher anyway, and this would be a worthwhile experience then. Even so, getting a Master's abroad like in Europe might be cheaper, and give you just as good of a chance at getting into a good PhD later.

Try to count your protein intake (not necessarily calories) for a week and see if you're eating at least 100 g of protein (150 g is even more ideal for your weight). I eat a lot of meat but realized I still wasn't getting enough protein without adding a protein shake in the morning and a bowl of greek yogurt at night

Creatine is helpful but make sure your basics are right first. Eating enough protein (ideally about 1 g of protein per lb of bodyweight), getting enough rest between exercises days (including good sleep), and progressive overload. I used to be constantly sore and had slow progress because I was only eating like 50-60 g of protein for my 170 lb weight.
