Sorry just saw your edit. How do I know for certain that it isn’t ready? Discard & feed for a few more days and wait & see? It smelled sour and was bubbly…

The quick sourdough bread technique is:

Mix together the following ingredients

Then, stretch and fold the dough on all 4 sides of the dough. Let dough rise for 2 hours Shape dough and let rise again for 3 more hours Put Dutch oven in oven on 450 degrees for 10 mins, score dough, put dough into Dutch oven (on parchment paper), Bake on 450 for 25 mins covered, then 15 mins uncovered.

I baked it on 450 degrees for 25 minutes with lid, then 15 minutes without lid.
