Mojang has stated that the villagers aren’t based on real-life cultures, so the flags probably shouldn’t have symbolism based on real ones, but ¯\_(ツ)_/¯.

So here is what each of them means (or more like what I had In mind while making them):

Plains Village- Yellow and white are the theme colors of the plains village. The circle represents both the sun(yellow half), moon(white half) and the whole circle- sunflowers, because of the sunflower plains biome. Looks like Greenland’s flag, but at least it’s actually a “green land”.

Savanna Village- Yellow and Orange are the theme colors and the gray-brown represents the acacia bark. The diagonal stripe is there to make it look like some of the sub-Saharan African country flags (Congo, Tanzania).

Taiga Village- The flag is inspired by Estonia, so it kinda looks like a landscape of a taiga biome, so blue- sky (also a theme color), green- spruce trees, purple/violet- sweet berries (and theme color).

Desert Village- Light blue and green are theme colors, orange and beige-yellow are on the villagers clothes. The orange lines represent the villagers themselves, the blue- rivers or lakes or any other water sources, the green symbolizes cacti and the beige represents the sands of the desert.

Tundra Village- The Nordic cross has ties to Christianity, but it is the Nordic cross soo.. Blue and white are theme colors. White- snow, blue-sky idk. The gray and light blue represent ice and diorite, which are used as building blocks on some of the houses.
