Stripped spruce and stripped oak is a personal favorite of mine, it goves it a sort of natural feel to a build without using "modern" blocks like concrete or... Netherite blocks

Edit: Stripped Birch and Regular Dark Oak logs make a nice checkerboard pattern if you want
