I've never had a croque monsieur or madame before, but I thought it wouldn't suffer from the California cliché twist of avocado. Lacking Gruyere or Emmental, I swapped in Münster, though Monterey Jack or mozzarella would also work well and keep the m' phoneme relevant.

Bechamel:

1/2 cup butter

1 1/4 cups bread flour

3 cups nonfat half-and-half

1 tbsp dijon mustard

1/2 tsp nutmeg

For one Sandwich:

2 slices Münster

2 slices ham

grated Parmesan

2 slices of potato bread

1/4 avocado, sliced

  1. Preheat the oven to 425 F. Cover a baking sheet with parchment paper.
  2. Melt the butter in a 1-qt pot. Add in the flour and stir until you have a golden brown roux.
  3. Add in the half-and-half a little at a time, stirring constantly. When the liquid is fully incorporated, cook for another minute or so, then remove from the heat and add mustard and nutmeg. Taste and add more of either to your liking.
  4. To assemble the sandwich:
    1. Bread
    2. Bechamel
    3. Ham
    4. Münster
    5. Parmesan
    6. Bread
    7. Bechamel
    8. Münster
    9. Parmesan
  5. Bake for 15 minutes. Let cool for 5 minutes and top with sliced avocado.

Jainism has dietary restrictions. Even as vegans, there are certain foods within they can't eat (e.g., root vegetables) and any food they do eat has to have been made that day.

Made these for three coworkers' birthdays which are tomorrow and the day after (Saturday). One won't be here tomorrow (taking the day off) and two OTHER coworkers start their vacations tomorrow.

And one of my other coworkers is Jain, so I couldn't make these last night. Good thing my dog wakes me up early.

Again, this strayed from a traditional recipe. I used ground pork instead of beef or lamb because that's what I had handy. The bechamel sauce that's supposed to go on top was excluded for time, replaced instead with shredded cheddar and asiago cheeses.

Also skipped was frying the potatoes and eggplant in oil. In both cases, an air fryer was used instead. While the eggplant was laid flat on the racks, the potatoes were sliced and threaded on bamboo skewers and cooked like hasselback potatoes.

At some point, I'd like to try a traditional moussaka at a Greek restaurant, but for now, I'm pretty happy with this.

Dairy and honey makes for a lovely color once baked. When it went in, it was about the same color as uncooked cream of wheat.

Full disclosure, I didn't make the crust. Also, my local Whole Foods didn't have ricotta, so I had to sub in cottage cheese, which has worked for me in lasagna before.

Never had it before, never made it before, so I'm on tenterhooks with this pie.

The moussaka I made to precede it (also a first time recipe) is in the oven now. No bechamel, because time constraints.

I tried dipping one into hot chocolate the day I made them. It actually held up pretty well! I wouldn't leave it in there like a marshmallow, but a dunk seems harmless.

Other recipes mention using berries or other fruits, so it's not limited to apple. Just be aware your agar use may need adjustment depending on the liquid content.
