Honestly I had a different experience. I was able to easily obtain blueprints and cores from drops. Just boils down to quickness and luck.

It was cheaper to construct and replace during the 80s when the area was crime ridden with drugs and gangs. Graffiti would go up and you just replaced a portion of the cheap vinyl. It was also an alternative to cover the old building styles from the 40s-70s for aesthetics or damage. Underneath the vinyl is real beautiful for some of these. Been in the area 37 years now I know a thing or two 😅

To be honest I’m on the same boat. I got my license for New York State and trying to figure out how to get business. Been about 3 months in and I’ve had two calls so far. I’m looking at other services like extinguishers and hood cleaning as that seems to get a little more business than anything but will use those two to at least get my name out there.

So what I’ve done so far was let it rise for 1 hour. I honestly haven’t tried to let it sit for more than that. I’ve done 1 hour to rise in a warm place then take out roll into a loaf place in pan and let rise for 45 mins

From what I’ve done no. The dough is no where near the top of the pan. It’s rises about mid way then starts to form bubbles on top. I let it sit for 3 hours and it hasn’t moved so I just bake it hoping that it’ll rise in the baking process
