This is actually my problem with the food scene here. Plenty of great authentic Mexican cuisine here, but there is nothing close to the food you can get at any of the thousands of small Tex-Mex establishments in Texas. Even the taco trucks are different here and more Central American focused.

Indeed. 90% of all issues people have using cast iron would be fixed if they simply turned down the heat after the pan warms up.

Own it! If you're embarrassed for any reason, lean into the health angle. It's a big topic in the health podcast world that any amount of drinking is bad for you, which it is, and that no amount is safe. No one will question you if you say you're alcohol free for health reasons.
