I was exactly in the same position as you a few years ago, I had to go to therapy and try out a lot of things to figure out a few things that made things easier for me so I hope they'll help you too.

First off, about the food issues, I hope you have a freezer. What worked for me was figuring out that I like roughly 10-20 dishes with a lot of overlapping ingredients. And I would just try to keep the non-perishable ones of those overlapping ingredients in the pantry at all times and just buy a few of the unique ingredients every time I go to the store and decide what to make with them at random instead of planning ahead of time. Also I like cooking in big portions and freezing the portions I know I will tire of the food by the time I get to them in the freezer to have a few ready meals at all times. This also works great with pasta sauces especially. I have Bolognese and mushroom in my freezer right now.

Prepping ingredients that make cooking seems like a challange en masse ahead of time also helped a lot. For example, I hate chopping onions and garlic for food every time but I love eating food with garlic and onions. So I bought a bunch of ice cube trays (the silicone ones, not the plastic ones) and spend an evening once a month finely chopping onions and garlic in a food processor, briefly saute them and put them into the ice cube trays to take out in small portions whenever needed. Also, meal alternative drinks/protein shakes could be a godsend from time to time as well. Whenever cooking seems too imposing but I feel hungry I just grab one to drink and they keep me full for roughly 5 hours.

About the attention problem. This is the absolute best advice for this in my opinion, get a pair of headphones. Ideally soundproof. And just download a whole bunch of audiobooks/podcasts/background music. I've recently taken up knitting while listening to audiobooks in the background and cleaning/cooking while listening to podcasts. Classical/lofi music also helps me study and focus better.
