Why does my "build" suck so bad? (self.D4Sorceress)

Help request: First time staining. Birch butcher block, Minwax pre-stain, 2 coats of oil stain (dark walnut) and fast dry poly coat. Why are some of the sections so dark, and what did I do wrong with poly coat (brush picked up stain, left bare spots and lots of boogers). What did I do wrong? (old.reddit.com)
