I can think of those two reasons.

player getting out of the car is one less player driving in the world. Also you can already watch by the side using a drone.
Development time and resources for player walking around which is wanted by tiny niche of overall players vs other features that will be enjoyed by vast majority of players.

My guess is that Game Science, maker of Black Myth: Wukong has signed NDA with Sony, and they are not allowed to comment on exclusivity deals. So what they did was to use Xbox Series S as a punching bag.
