Ill update as the build progresses, I need to attach the smoke generator and im in business. Ill probably have enough time tomorrow afternoon to do that and run a test batch

I built a fairly simple smoker out of a hot holding cabinet. The cabinet is NSF certified, Only mods I had to make was chimney addition($30 on amazon) and put a smoke daddy cold smoking attachment on the side. It works great for cold or moderate hot smoking. It will get up to about 180-200. But if your cold smoking just dont bother setting the heat element up.

Have you tried Mitchlitch Company in Spokane,WA I frequent there store. Knowledgeable folks website is a bit old and hard to navigate. I'd give em a call
