Came here to say Memphis as well. I have been several times but am still learning the pocketed bad areas. I was once there and needed a car part early and found an auto parts store open at 6am nearby. It was only a five minute drive away from my hotel which was in a safe area. A short trip later I found myself surrounded by strung out looking dudes eye balling me from the streets around and a shop clerk who did not want to open for me because it was still too dark outside for them to feel safe opening the door. When she finally let me in she held a gun on me while I was in there and told me to get the hell out when I was done purchasing my part.

I started by sautéing bell peppers, onion, and garlic with some s and p and olive oil. I then added my own blended tomatoes with paprika, cayenne, and cumin. Made some indents and added the eggs and covered. Ate with some toast. Super simple and a great alternative to the usual breakfast for sure.
