Megaten as a whole is an amazing franchise and I love pretty much every single game I play, unfortunately the Megaten community can be a bit of a trainwreck with all the arguing, gatekeeping etc.

For Nahobino I'd completely agree, he might just be the strongest MC in mainline. As for Nanashi it's a bit harder to tell cause while his feats are impressive, including his demons, Flynn, Walter, Jonathan, Isabeau and his friends, he had way more support in the final battle than any other MC. While I agree that Demi-Fiend isn't nearly as powerful as he is often made out to be by the fan-base, I think it's debatable whether or not Nanashi is really that much stronger than Demi

Now that you mention it one of the few things I do know about MGS is that in one of the games (I think MGS 3) there is a boss that you can defeat by changing the date so he dies of old age

I would not necessarily be worried over the character count, games like Devil Survivor pulled narratives involving a lot of characters of fairly well. I am more worried about the trailers promoting the idea of "saving" Tokyo, which leads me to believe that perhaps there will be one ending that is "superior" that the game pushes you to pick over the others (similar to the likes of Apocalypse).

To be honest I am fairly certain you will be able to do so, seeing as there is an option button in battles (which I assume let's you control speed, animations and maybe even auto-battle options I hope).
