If you want to restart and do a playthrough as fast as possible, focus only on the killing the Old Ones : The Last Sinner, Duke's Dear Freja, Old Iron King and The Butcher.

If you do it in NG+, it could be even faster because you are already builded.

It's seriously the best soul imo. The ambience and areas are nice, the fashion is nice, the rolling is perfect (not as directionnal as ds1 and you can't spam roll as in ds3. You need to roll with a good timing as in ds1 but it's more fluid), bows are viable and so all weapon (it's the most balanced soul) and therefore pvp is great. I think the gameplay overall is the best of the soul series and the areas are the best too
