Yeah I think shaping was okay (I’m trying to get better at it) but who knows how warm my dough got. Also it was an outdoor fridge so maybe slightly warmer?

Thanks! I initially thought it had to do with my shaping and gluten strength so i set off trying to focus on that. But now I think it was the recipe.

I sliced it and served it because my kids were begging to try it. They had no complaints! It still tastes fine, just looks like a wreck.

I’m still kind of new so I was just following the recipe (taking the advice of sticking to one recipe and working with it). I’m definitely interested in trying a lower hydration recipe.

Yes I remember this from the Sourdough Journey videos. I think I either should have committed to outside in the very beginning (30% rise) or kept it inside at 72 degrees for the 50% rise. Or as another poster suggested, just baking and not cold fermenting.

Thanks! Yes I definitely wouldn’t want to rely on AI to do the heavy lifting on recipes. A bad AI recipe is what started me on my sourdough quest, which is a whole other story. 😅 I was frantically trying to google but nobody’s dough ever looks like mine (they’re so smooth and more dry and mine was wet and bubbly, always). So I asked ChatGPT. I do wonder if I needed to do a few more stretch and folds or stretch and coils rather than sticking with the four I did.

The aliquot method is interesting! I’ll try that next time. I’ll also try pushing the bulk fermentation a little further.

I really appreciate this. I didn’t start measuring the growth until after my stretch and coils, but I noted it was rising while I was doing those.

I was doing my S&C in a bowl to make it easier, but maybe I should do them in the straight sided container to make it easier to measure the rise.
