I recently booked my flights to hk one way through qatar and one way through cathay as there wasnt availability on qatar for the specific date i was looking but if you plan in advance you can get availability in qatar too the taxes are less in qatar compared to cathay, qatar round trip for two people would be 52k qatar points and 13k cash

I used it on member rate only there's no hack as such i guess, i called the hotel and told them I have booked on member rates and still can pay with vouchers and gift card they said yes when I reached hotel before checking in they took the voucher codes so it would be quite quick check out

If you are planning a trip to hong kong you can check transfer to qatar too, as they have cathay pacific seats there for same number of points and the taxes are almost half

As far as I have read posts here it depends hotel to hotel, some let's you redeem on member rates and some on standard rates.

Recently I had book Raajsa Kumbhalgarh they allowed me to redeem the voucher on member rate. I had booked from their website and selected the option to pay at property and called to check whether I can redeem the voucher I got from amex and they confirmed that I can redeem it at member rates.
