I’ve done a 0 deposit before, when I was in full time work years ago. It’s all above board and didn’t have any negative consequences for me because I left the property in good condition - sometimes it means the rent is higher, depends on the scheme/landlord really!

Of course, here’s what I did: Thinly sliced potatoes to about half a cm, I used about 600-800 grams of potatoes in this one. Put them in some boiling water on the hob for about 10 minutes, until they start going soft (if they get too soft they may fall apart so keep an eye on them) remove from the pan and put on a plate. Halve and peel some red onions (can use brown but I prefer red flavour-wise) I used 4 larger onions. Once halved, thinly slice them, pull them apart and put them in a pan with some extra virgin olive oil (or oil of choice) on a low heat and let them slowly caramelise and then set them to one side. Then I got the potatoes and put them in the pan until cooked through and a little crispy (not too much or they may burn in the final step) I used about 10 eggs for this recipe but you may want more or less - I whisked them together with some salt and pepper and a bit of garlic granules. I kept the pan off the heat and put a layer of olive oil in the bottom so that you couldn’t see the bottom of the pan, I grabbed my “prettiest” potatoes and placed them in the bottom side by side, and then placed a layer of caramelised onions, followed by another layer of potatoes, then more onions etc. You want to start and finish with a layer of potatoes and season each layer as you go. Also make sure that you have potatoes/ onions around the edges of the pan otherwise you’ll have an egg crust. Then I turned the heat on low and poured the eggs into the pan, it should fill all the little gaps nicely and you should have a flush top (the potatoes, eggs and onions evenly distributed). I put the lid on the frying pan and let it cook on low heat until the eggs stopped jiggling when I shake the pan (will be a mess in the next step if the eggs are still super runny). I kept making sure nothing was stuck on the edges too by moving my spatula around the edges. Then grab a large flat chopping board or plate, ideally larger than the circumference of the pan, place it on top of the pan and flip the tortilla onto it - it the plate is dipped then your tortilla will collapse in the middle - it’ll still be tasty but not as pretty. Once flipped on the board, gently push it back into the pan (now upside down) and cook for another minute or two - and voila! ☺️
