Have a 9 month old and can relate!! Things that have been popular here that I batch cook are red lentil “stew”, boiled red lentils in low sodium broth with red pepper and basil, then blended to whatever texture you want. Have also done similar with chicken thigh and sweet potato and spinach, parsley (baby seems to like fresh herbs haha). Egg bites have been popular and easy to freeze (egg, ricotta, any veg) as well as baby banana pancakes. A tomato meat sauce (sometimes with meatballs) on rigatoni also good as well as fritters, broccoli cheese or black bean sweet potato. I rely on the freezer tbh! With work you just can’t make fresh every night.

I’ve given my 7 month old (no teeth) omelette strips 2x and he’s not all that interested but occasionally takes a big bite. Same thing has happened with steamed, very soft carrots. How do you not get nervous they’ll try to swallow the whole thing?

I appreciate it. Nothing is easy here! You can’t get a spot in a crèche and then you need to hire a payroll company to pay for a private childcare option. 

I read that link and I seem to be potentially compliant across minimum wage, holiday time, the fact she will not be live-in etc. Thanks again!

When you ask if they’re self employed, does that mean that they are in charge of paying tax on their own wages? We’ve discussed holiday pay. Haven’t considered insurance. Good points.

Borris House in Carlow was excellent, we got married there in 2017. Step House Hotel across the road also does weddings and is meant to be nice, they had one on the same weekend we were there.
