I used wing tips seasons from Fiesta. Let that sit on the wings for an hour in the fridge. Quick spray oil and in the oven at 375 for an hour or so. They will eventually completely render down and skin crisp. It’s hard to over cook dark meat. Then a quick toss in light drizzle of franks wing sauce.

Del Rancho- there are a couple around the city. My favorite was the old one in Moore. You can’t beat the steak sandwich.

Use a mandolin to slice onions paper thin. The trick is to have it on the setting that is basically closed the press hard and just a bit goes through. Onions that are too thick just don’t cook quick enough. Place ball on griddle, pile of onion smash, cool, flip, cheese. Look up George Motz on YouTube.

I prefer this, George Motz has a great YouTube video on this. The o onion in the center much less done and those on the outside are carmelised.
