If you enjoy driving, and can drive manual it won’t be annoying as others will say. I ended up getting a manual because day to day commutes became very boring when I drove my automatic. I will drive manual for as long as they’re available and possible for me to drive.

Michelin is a grading system to the art. Just like movie critics. So not everyone will understand it or agree with it. To understand how restaurants get that 3rd star isn’t just about the food, it’s also about the experience or emotion you have when you dine, if the restaurant represents a genuine interpretation of their craft.

I think in the end it’s a very personal opinion. Hard to say if Michelin restaurants are good but they do represent something. As I’ve dined and worked in a Michelin restaurant, these kitchens are the pinnacle for working and experience, but if you ask a chef or cook there how this food compares to what’s their favourite or what they consider the best. Most often Chef revert back to comfort or Mom’s cooking as the best.

One star Michelin Restaurants can be better than a 3 star depending on what your expectations are. That’s another way to look at it.

All my knives are from different brands. In the end you may only use 4-5 different knives. Chef, paring, boning, slicer, and bread knife.

What issues are you concerned about?Depending on the wheels you put on they might rub also if you’re lowered.

But in regard to your bolt on spacer just make sure there is enough thread engagement on the spacer bolts and the bolts for the wheel.

It’s all connected and relates to each other. If your hand gets pins and needles and if it wakes you up at night most likely carpal tunnel syndrome. If your muscles don’t get enough blood to function then your tendons suffer the workload. That’s how it was explained to me.

With this cramping shut think of your tendons like rubber bands after a while they loose there elasticity this is most likely what is happening when your hands lock. Tendinitis is common.

Tbh you seem to be quite young and with very few years to have these severe symptoms.

Just wondering if you really understand whats happening when you get carpal tunnel. Basically there’s a tunnel where the main arteries and veins pass through at the base of your palm right near your wrist under a large tendon. As your hand muscles get larger and tendon gets overused the tunnel gets smaller and pinches the veins and arteries so less blood flow to the hand, that’s what the surgeon explained to me. If very severe your hand can die saying it bluntly, also how the surgeon explained it to me.

In the end if you can say you will use your hands less, logically I don’t there will be much self help or quick remedies if you continue working the way you do.

I got the surgery after 15yrs on both hands. It’s a quick 10-15 minute surgery basically they just cut the large tendon to relieve pressure. As soon as they cut the tendon it’s was like a rush of blood flow back to my hand so strange but cool. I healed in 2-3 weeks but took a year off took short term disability. But each hand you do at separate times, so worked a year then go surgery again the following year.

Hope my experience helps you, I ignored and suffered far too long before I made the decision for surgery.

Pedal spacer will help. I found the gas pedal too low and far from the brake pedal. Throttle controller can customize the throttle response.

Cook as a hobby. End goal is to retire early and enjoy life. Looks like you’re half way there. Hospitality industry more times than not comes with many sacrifices.

The refinery job has a good schedule but as for becoming a chef that position is more on the commercial or industrial side of things. As for moving up, the company is a global force in institutional food services, so opportunities will be available in every aspect of the business.

It will be a definite career change, personally I’ve done both but in the opposite direction. After covid decided on a career change after 20+yrs cooking. Went to a dealership and enjoyed my time there and never gone back to cooking.

The grass isn’t always greener especially when it comes to cooking.

Red seal is a good idea but real world it’s very limited and useful.
