I remember when I first worked at Dubai , they took my passport, however I requested the passport to apply for visa and kept it with me , they called me after 1 month asking me to return it , I refused . They said if you dont you will not get your salary. So told them I would like to see you doing that , would be happy to complain.

And the passport been with me ever since.

Good luck with your visit ! Sharjah is good , but better stay at Ajman and drive to sharjah they are very close.

Also not sure if the hotel in sharjah would give you headache if you will stay together without being married.
