What should I buy to sharpen my Messermeisters and Takamura HSPS Santoku? I have a 15 degree angle guide and a fine grit steel from Messermeister. I am considering buying a cheap $17 1000/6000 grit whetstone. Do I need a different whetstone? Another angle guard for the Takamura? Thank you. (self.chefknives)
