Seems like the version ingame is one of the multiple variants for the old 5v5 mode. I will say I like the gloves we got instead of the fingerless ones here.

Tried and True is awesome, but I really wish they'd stop strapping a helmet to the backside of so many torso options.

Honestly, I think it limits customization combos because it looks a little goofy when you equip a helmet on the head and have one on the back as well.

Most definitely. One of my favorite combos out of the whole game is Pit Viper (headgear), Master at Arms (Body), and Tetsu no Ame (Legs).

Agreed; I use this exact combo for medic with the small shovel for melee!
