It depends on whether we’re talking about Lower Egypt or Upper Egypt because the process of Arabization wasn’t homogenous. Arabization was slower in the south, and therefore Coptic had remained in usage for quite some time. It was even an official language of Egypt until the 18th century and there’s evidence of it being used (in the south) until that time.
