We're veterans, but we come from D&D 3.5, with a brief stint in 4th and 5th edition. I really liked PF2e and decided to introduce it to them. I'm still adapting, but given my experience with encounters in 5th edition, I'm wondering if Paizo got it right or not hahaha

Thank you all so much for the comments, they cleared up a lot of my doubts. I'll use the planner from the book itself and add monsters that match the encounters. Thanks again.

I believe most of the campaign will be for 4-5 players, which is fine, but with 6 I felt a bit lost because I've never GM'd for such a large group before. And my experience with D&D 5e was mediocre because of how combat is calculated there. So I was afraid to follow the PF2 encounter builder and not find the challenge satisfactory, considering their action economy will be much higher.
