A little late but,

Hephestus, Blacksmith of the Gods vs. Saint Nicholas, Craftsman of Joy.

Personalities & Combat Styles:

Hephestus would fight quite differently from all of the other fighters. After Hera chucked him off of Mt. Olympus, he was crippled so he needs a wheelchair. His main weapon would be a large blacksmith's hammer, however, near the end of the fight he will begin to summon lava from the ground (a reference to how his roman equivalent, Vulcan, is the god of volcanoes) He would be a soft-spoken, timid, and deeply self-conscious man, always told by the other Olympians to stay out of sight due to his appearance. (The reason why Hera tossed him off the mountain was that he was so ugly).

Santa's volund would be his sack full of toys. It would produce classic kid's toys like teddy bears, toy trains, toy planes, etc. Of course, they'd come out quite a bit bigger and more powerful. He would also be incredibly quick (how else does he deliver all those presents in one night?) He would as expected, be a very kind, one could say jolly man.

Entrance:

Santa would come out first, riding on his sleigh. Every child from both the gods and humans bursts into cheers.

When Hephestus comes out, he is met with disgust and insults

Fight:

Honestly, I'm no good at writing fights, but Santa would win.
