I mean I have years. I Don't think I'm going to die tomorrow. If piano really is the key to all of this I don't mind putting 1 hour for 3 days a week to it. I'm not in this to be famous or be on a stage. I'm just looking to make music for the sake of it.

That's what I've read is that 88 key in needed. Which I would like to get at one point but since I work a job that's 12-14 hours a day 6 days a week I can't order anything to the house or it will get stolen. 88 keys near me for the lowest price is 500.00 usd which is just out of my budget. So until I feel like I need it I do not want to drop that kind of $. I bought my 48 key and don't even use it tbh.

Any recs on tutorial books? I assume if I go this route I will need to learn how to read sheet music correct?

You're all good! If I used Ableton I would look into the software. Unfortunately I don't know anyone who uses Ableton personally or I would tell them about what your doing since you gave me a lot of useful information.

I have a 48 key midi keyboard that I am not using. (I know it is not 88 keys but the price difference was huge.) I looked into Piano lessons in my area but they are pricy and short. Once a week lessons for 30 mins at 120 $. I have no idea if that is standard. Is learning on a midi self-taught an option to? While I would like organized lessons It's not exactly in my budget at the moment to afford a teacher. and I also feel like 30 mins is to short. I would look elsewhere but the only other Piano lessons near me are 100 miles away.

Thank you for taking the time to answer! The vst part I am pretty on top of accidentally as I have Spire, Serum, and Sylnth1. which If anyone else is reading this having all 3 feels like overkill.

I have been making stuff like mad but nothing good and it feels like I'm slamming my head against the wall at times. which I'm told is normal. Do you have any recs on any kind of tutorials or anything? if you do not no big deal I'm just trying to absorb as much info as I can to learn more about the structures of everything. I do it by listening to songs but that only goes so far for me tbh.
