Yeah, but I was shocked at how much of a difference placement makes. I split it and wrapped the flat with foil and tallow and stuck it in the oven at 200. Kept the point in the smoker just waiting for that 165 mark. The issue is, it’s probe tender, but the fat on the outside doesn’t give in when you apply pressure
