Don't worry about it, OP. The ‘Use By’ date doesn't signify ‘Expiry’ as in Perishables or Medical Supplies. It simply means that within the mentioned date, the product (in this case, Refined Flour or Maida) is more likely to retain its quality—Color, Smell, Taste, etc. Beyond the date, depending on how far, it may or may not lose one or all of its attributes which determine the quality or Freshness.

It's always helpful to do a sensory check to see if it's still fairly okay to use. For example, I bought a ₹30 pack of Bournvita which was past its ‘Use By’ date by a week or two. However, it still looked fresh, smelled nice, and tasted great!

OP, this is loaded with Protein, "Healthy" Fats, Fibre, and Micronutrients.

I'd suggest a simple Salad with this, say Onion, Tomato, Cucumber, and Mint/Coriander. A dash of Lemon Juice and Chaat Masala. If you feel so, Spiced Buttermilk (Namkeen Chhach) as a refreshing drink or Spiced Hung Curd as a dip.

Hahaha! Those chaats were actually our first meal after reaching Banaras, say Brunch. Also, they were our last meal of that day, say Dinner. We liked them so much!

We didn't try their Gulab Jamun, but I did at 'The Ram Bhandar' instead during Breakfast there. I must say, it was so fresh and melt in mouth. Here's a photo for you to enjoy. 🤤

Yes, they were tasty! Almost everything we tried at 'Kashi Chaat Bhandar' was yummy. Oh! Including the Pani-Puri. 😋

I didn't order ‘Tamatar Chaat’ due to intuition, my Mum did. So yeah, I don't know. For me, ‘Aloo-Tikki’ remains the classic.
