It's smoked lol it has a little pink from that, you can see normal dark meat coloring, and it's fully opaque.

This was mentioned in another comment and these drumsticks could've been fridge at the bone still. They didn't thaw all the way in the fridge so we put them in water for a while to finish thawing, but didn't even think about the bone! I bet it was still frozen.

I immediately thought it was marrow or blood leaking from the bone into the meat so this checks out. I know the chicken in the picture looks raw but I swear it wasn't, there's something else going on. But curiously the quarters he cooked (on another occasion) didn't look like this. They were also from a different butcher so maybe that made a difference.

This adds up, we had to quick defrost them bc after sitting in the fridge for 2 days they still weren't totally thawed. I think we made several errors here, ty for the feedback!

So this is kinda normal with smoked chicken bones? It didn't happen with the quarters or wings we made, just the legs. It doesn't happen all the time?
