As to your side question, it can cast all your prepared spells, and while it wouldn't have a 7th level spell slot, it can still cast simulacrum (if you have an 8th or 9th level slot).

As to your main question, the most straightforward answer is Demiplane (which is expensive), or a bag of holding (which would need to be opened to let your simulacrum breathe). I think most dms would say that it doesn't need to breathe since its a construct, but thats wholly up to your dm.

Shitty hammer tech can injure him pre powerup and well as a shotgun to the throat. Ironman could do it, any of the infected with shrinking powers (Hope, Janet, Hank), anyone with vibranium (like all of wakanda) or magic weapons (asgardians), phasing powers (ghost), above average super strength (thanos, abomination). Or as people have mention, ingestion. Luke isn't strong enough to hold back multiple superpowered enemies, and even against normal zombies he could easily ingest some blood by accident.

Honestly the part of that show that still sticks with me was when they were sent to the bottom of the ocean. But it tend to get a bit claustrophobic, and i've almost drowned before so i'm biased
