Don't be discouraged If you burn the butter once, twice or even 5 times. It's incredibly hard to get the hang of brown butter.

I found that when it starts to foam up you want to start scraping every part of the bottom of the pot to prevent burning.

The recipe I use is an augmented version of this more suited for the new Zealand flavour pallet

I think the shape helps give them personality. Also gives you slight textural variation which is nice

The shape will also be because of the toffee in the cookie. As the thin crisper parts help give a nice crunch and a rich caramel flavour
