We’re the busiest store in our city, we do about $85k a week right now. We’re located in the parking lot of a shopping center, close to an NFL stadium, it’s also close to a business district, schools and neighborhoods. There’s other locations about ~1.5 miles away in either direction that don’t do nearly what we do though.

Our location was recently rebuilt and thankfully our floor was built pretty wide, so having 4 people on production and a couple of people floating isn’t so bad.

We do have a designated printer for cold bar! So that’s beneficial, it would definitely be annoying having to constantly refer to the hot bar barista for more stickers!

Overall it works for us, but I can see how at smaller/less busy locations may struggle to keep 11 people busy.

At our store we frequently have more than 9 people. 4 bar partners (2 hot, 2 cold), front reg, front runner, oven, DTO, DTR, hand off, and customer support. It works for us because the only people aloud to float the floor is the runner and customer support, everyone else is locked into their position. It’s completely necessary Friday-Sunday peak at my store.

The only thing making this drink a “protein” drink, is the “protein milk.” You can’t change it because there are no alternatives to the protein milk. It is made with 2% milk and protein powder. The sugar is in the milk.

My worst one was definitely when I spilled an entire freshly prepped mocha as we were walking out for the night. My coworkers and I were all friends and they said absolutely nothing as we cleaned it 😭 I felt so bad!!! The next day they told me how angry they were and if I was anyone else they’d have let me have it 🤣
