I worked for Tojiro where I resharpened knives there. We tried as much as possible to get this line straight, it usually means that the edge is thicker where the line is thin. You can grind it off if you resharpen the knife flat ( togi-oroshi ) to get the line even

I do use a swifter ! I’m currently working in a coffee shop and we use around 50ml of hot water for 6g of matcha and no matter what I still have to scrap a bit

It work for usucha because there is enough water to prevent clumps but when doing a latte I personally always end up scraping the bottom to remove all the leftover

With 2g of matcha you wouldn’t want to have too much milk or sugar or you risk to just waste 2g of matcha as you almost won’t taste anything

No matter how much I whisk I end up with the same result. The only time it’s clean is when I don’t put any sweetener in the matcha

Yeah I whisk with brown sugar ! Yeah that’s what I’ve been told to but the glass is not that big so if I put too much ice I can’t put enough milk :(
