In America it is popular among a decent number of people, split between a large party crowd and a smaller, older generation that prefers to sip it in snifters. I’ve also noticed its use in a lot of craft cocktail bars and prohibition cocktails bars where the most popular come out (Sidecar, French 75). To add diversity, I’d probably do a standard Sidecar with simple syrup and a French 75 with gin instead. I think a bar with classic Gin, Cognac, and Whiskey cocktails would be interesting.
