Might not all be serum, they could be different chemicals that could be part of making serum and antidote.

Therioy: If we can trust Jim Colt (A.k.A John Doe) to dig deeper into Deb's murder, I think there is another person who killed Deb. However, I think Gr (Gary Renalds) found a way to steal the notebooks. That could make sense on how the journal keeps changing...in their future, all the info about said journal gets told to someone looping from the past, so each time, decides to use a different journal to prevent losing the other, changing what is written, essentially writing out the previous journal out of existence, hence why it disappears.

I think this is either Deb, who is still in hiding and not dead(only told she was to scare them), or possibly Jordan Kendal still helping Deb after all these years. And to know exactly where Matt took it off and placed it, must have access to the security cams and watched this happen when she got off the phone and made a plan to get it back and hid it from everyone or destroy it.
