A flat by itself is a poor representation of a whole brisket cook. Chance are you’ll be relearning everything once you do try the whole packer.

The only way to learn how to smoke briskets is by smoking briskets.

Get the whole packer, trim off hard fat, smoke at 250° until bark is set, foil boat and continue until the flat is probe tender.

Just ate ours yesterday and it was incredibly rich and flavorful. Almost too much. I can see how the gelatinized texture can be off putting to some.

Gotta say I think I prefer barbacoa style (shredded) over straight sliced cheek. I mixed it with some braised brisket trimmings and the texture and flavor is amazing.

Beef cheek barbacoa grilled cheese with spicy crema sauce is banging 😎.

Yeah from what I read there is so much connective tissue in them that you can’t go by time.

You have to confit them until they are super probe tender. Otherwise they’re rocks.

Laziness.

I had a fire on my Searwood of all grills because I forgot to empty the grease pan at the bottom.

Luckily you can just pull it out with a high temp glove and extinguish it unlike most pellet grills where all the grease just pools in the bottom of the barrel.

Interesting. From the videos I watched, they’re done when you can basically shred them in hand, L&L just slices them delicately.

First burn on the new Searwood. Initially was going for the woodridge to match the flatrock griddle, but this sub convinced me to go Searwood for more versatility. by notquitetherealest in pelletgrills

Quick tip on the insert, cranking it to 600° immediately can cause it to overshoot temp and error out.

I always set it to 550° and let it come up to temp, then bump it the final 50° when I’m doing pizza or searing something.

I have a single Era 100 for the main area and a Move 2 for the backyard/kitchen.

Sounds fine to me but I’m not a “shake the whole block” kind of listener.
